Adding Microsoft Exchange account to phone while traveling

Add a mobile access to the exchange account does require the phone connect to the campus network, internally. It is not good when you want to do it while traveling... Fortunately, with VPN, your phone will look like on the campus. Thus, allow the exchange server to really communicate with the phone, setup the account correctly for pushing email and remote wipe, etc.

If your school doesn't have a VPN service/protocol that can be used by your phone, you probably will have to setup your own server inside the campus network and ensure outside accessibility...
